“Pretty in Pink”: Cavatappi with Creamy Beet & Goat Cheese Sauce

Fall is here my friends and even colder temps are on the way. So why not get a head start and boost your vitamin intake with the right foods before cold and flu season? YES!

And there is one vegetable out there you just can’t “beet”. Oh gee, did I give it away?

Beets are at their best in the winter season but can be found year round. Not only are they colorful and downright gorgeous, but the list of health benefits can go on for days. They are super rich in vitamins and minerals, of which I list in full below. Pregnant women in particular benefit greatly from its vitamin B and iron, which promote new growth cells during pregnancy and combat iron deficiency.

In addition they are a great means to cleanse the body, aiding the liver, blood purification, and can even prevent various forms of cancer.  

With all of the health benefits, who wouldn’t eat beets?

This recipe is a real treat for kids and adults alike! I used pre-cooked organic beets. So easy. So good! If you already know that goat cheese will not cut it in your house, then opt for cream cheese or mascarpone instead!
